Quick Recipes for the Working Mom

Do you work full-time, and your routine includes twirling around deadlines by day and food-fuss by night? Hey there! Welcome to the club filled with every mom ever.

A child’s eating habits are a point of perpetual concern for a mother. If you're a working mom, your concern multiplies as you meet your child at the end of the day. Kids and their unpredictable and finicky taste buds are very challenging to please every day. The race is between nutrition and their moody taste buds. What if you could plan some healthy, yet exciting ways so that your child can eat without you? These will keep your child healthy even while you’re away. Most of the working mothers depend on a quick fix for themselves, and children ape that. The kids get bored with foods like oatmeal quickly. All you need to do is make their meals interesting but full of nutrients. But how? Come let’s go through some healthy, quick, yet nutritious recipes for your little one.

1. Stuffed Omelette:

Break the eggs into a bowl and whip briskly. Add some vegetables as eggs and veggies complement one another through the nutrients they provide and spices as per your taste and mix it well. Cook it on a pan for a minute or two and here It is ready to be served hot with toast. Eggs supply quality protein and vitamin B-12, while veggies contribute vitamins C and K. A healthy quick fix. Don't you agree?

2. Vegetable wrap:

Although it sounds like a snack, vegetable wraps can be given to children for either lunch or dinner too. It is wholesome, healthy and looks so appetizing that any child will get attracted to it. Once chapattis are ready, sauté vegetables with some butter. And ta-da your mixture is ready! Spread it on chapattis, grate a little cheese over it and roll it. Your healthy vegetable wrap is ready to get in the belly of your little one.

3. Dumplings:

Unlike popular belief, dumplings are not a part of the fast-food clan. They are actually pretty healthy as they require no spice and no oil to cook. Divide the dumpling dough into small round balls. Mix the minced chicken/veggies, onion, and salt in a bowl. Roll out each ball, put a spoonful of the mixture in each and bring both sides together. Make pleats on one side and seal the other with it. Grease the steamer with white oil and place the dumplings in it. Put a lid and steam it for 5-7 mins. Don’t you think they’ll love it?

4. Stuffed beetroot patty/paratha:

Whole Wheat Beetroot Paratha is an excellent way to feed your kids beetroot. It is loaded with the goodness of beets and fibre from the whole wheat flour. The best way to include veggies in your fussy kids diet. It is not only healthy, but it also has amazing taste. Switch, to a beetroot patty (recipe in the video below) once in a while and watch your kids fall in love with mealtime! Both of these beetroot meal ideas are super quick and loaded with the promise of good health.

5. Lemon Rice:

Lemon rice is a good source of vitamin C that helps in the production of white blood cells and complex carbohydrates which is an important source of energy for the body. To serve your child a light yet full of essential nutrients gently roast and grind the coriander seeds into a powder, and set aside. Add some oil to the pan, followed by mustard seeds, and curry leaves. Fry the mixture till it stops spluttering. Add some peanuts to this. Add turmeric powder mix and finally add some lemon juice, coriander powder. Mix thoroughly and serve it with a bowl of curd. Your child is surely going to love this
